Potato Soup


3 lb. bag organic potatoes
1 onion, diced
2 stalks of celery, diced
3-5 garlic cloves, whole
salt & pepper
Olive Oil
1- 32oz. box of chicken broth (or homemade)
2 cups of grated cheese (I use sharp)
1 small block of velveeta
Splash of heavy cream or half & half or milk

Topping Choices:
Chives
Sour Cream
Grated Cheese
Bacon

Directions:
Saute onions and celery in olive oil until almost tender (about 4 or 5 minutes), add broth, whole garlic cloves and diced potatoes; bring to a soft boil and boil until fork tender. Remove from heat; add salt & pepper to taste and mash with a hand held potato masher until as chunky or smooth as desired. Add grated cheese, velveeta and splash of cream. I also like to add a splash of olive oil for extra flavor. Let cheese melt and stir gently adding more cream if too thick. Top each bowl with topping of choice.
